Salvatore and Vincenzo Butticè

The two brothers share a passion for cooking aimed at maximum guest satisfaction. They define themselves as great friends even before they are brothers, and having different characters and characteristics they naturally work with each other to compensate each other.

Two different meticulous, the older Vincenzo towards planning and design, involvement and empowerment, enhancement of human resources, Salvatore the younger towards technique, the dish, cohesion and the overall vision.

Both always work to improve the sense of belonging, the cooperation of the group and a familiar affectivity and emotionality with all the members of the team.

Lady Chef Lara met IButtice in 2014 as a student of chef Vincenzo while she was attending the 3rd year of cooking at the State Institute for Food and Wine “A. Olivetti” in Monza.

She started with the internship at Il Moro in 2015 and never went out, on the contrary, with everyday life, perseverance, method and stubbornness she conquered a central role within the team.

With a weakness for pastry, with the support of Chef Salvatore, it was decided to make it grow with a dedicated training plan by having it periodically supported for 2 years by one of the most valid pastry chefs in the country, Antonino Maresca.

Transversal, dynamic and multipurpose, he refines his pastry techniques and dedicates himself with chef Salvatore to bringing lightness, chromaticity, geometries and textures even in the game of appetizers.

First meeting in 2016, still very young he supports the interview in an excellent way showing determination, vision and great dynamism. Ready to welcome him, but he decides to have an experience abroad.

He returned to Italy and began working for a very dear friend of the Butticè family. A fortuitous meeting with Vincenzo and redeems the spark. “ Chef not having accepted Il Moro’s proposal will always remain my remorse”, Vincenzo replies: ” in life you don’t live on remorse, when you want the door is open“. Shortly thereafter Roberto joined the kitchen team.

He starts with the Appetizers, an elegant and precise hand, he immediately collaborates with Lara with enchantment, Roberto’s ability to listen and observe immediately put him on display. The Values of IButtice are part of his ethical and moral DNA and therefore from then on he focused on doing.

He moves into the game of first courses and sauces, improves elegance and balance together with resourcefulness, curiosity and study.

And here Roberto conquers a central position in the kitchen team of Il Moro.

Napoleon began collaborating with IButticè in 2010, as soon as he arrived from Santo Domingo, Latin, strong and passionate, he immediately integrated with the family and staff.

Precise and attentive, he takes care of and manages a very important department, cleaning and hygiene.

A halo, a drop, a darkened pan are very serious mistakes for him and he dedicates himself constantly and diligently to the quality of Il Moro Ristorante.

Antonella entered the restaurant industry in 2007 with the Il Moro Ristorante Project, with previous skills in the social and integration field and with in-depth knowledge in the field of economic and financial management of companies.

He worked his way up at the Moro di Monza, starting with peripheral roles and responsibilities. The passion for service and catering overwhelmed her and Salvatore, her brother, was the main architect.

Stakhanovism, curiosity, perseverance and stubbornness distinguish Antonella, who in the meantime also falls in love with the world of wine, soon achieving the second level of Fisar Sommelier.

He develops human resources governance skills, refining himself in the rational and emotional management of the reference team, focusing over time on the enhancement of each individual member of the work group.

Marzia was born and grew professionally in Il Moro, she began with the dual path coming from the CFP of Cinisello. Shy she enters the room and follows Antonella’s steps right away, always projected on the solution you can immediately see that she has what it takes because she likes to welcome, serve and make the guest feel good.

Elegance in bearing and gestures are part of herself, and when we asked her what she thinks of Il Moro, she replied “it’s like my home, I grow up in Il Moro and with it I want to go further, now I’m also seduced by the world of wine and soon I want to start a specialization path”

He began three years ago at Il Moro showing a strong passion for service in fine dining, a great observer with an important listening ability, he dedicates himself with great constancy and commitment to reach levels of competence in line with the standards of Il Moro.

A tone of healthy irony distinguishes him and the emphasis used in presenting the courses could be taken as a model.

Trainees and interns

As happened with Lara and Marzia, synergies with the world of school and professional training are fundamental for Il Moro.

From this year we have applied as a company for Erasmus projects involving schools and vocational training centers in Europe and with the countries that adhere to Erasmus. This year we are hosting two Turkish students, and three students from the Olivetti of Monza.
