Good morning, this morning for obvious dietary reasons, writes one of the Brothers, Vincenzo, I make a reflection on tasting, rereading a passage of “the fabulous history of vegetables”

To taste means to enjoy a dish, but the term “taste” derives from “to choose” and indeed it would seem very intuitive that the choice falls on what is tasted.
Taste presupposes disgust as good taste.
By good taste, to put it as Evelyne Bloch-Dano says, “simplicity, elegance, refinement, harmony, naturalness, good taste never presents sophistication, exuberance and exaggeration.
When you think of good taste you look for “measure, balance and truth”
