Chef Vincenzo Butticè tells of a dinner that enriched his professional vision of elegance at the table.

On the occasion of a private and exclusive dinner requested by a very polite and distinguished gentleman.
Within the half-light of an evening, the restaurant seemed to unfold like a work of art, –says the chef: we enriched the restaurant room with roses, roses and white orchids as requested by the Guest. The soft lights and background music, only instrumental, piano and saxophone, created a sophisticated and refined atmosphere, the perfect place for the distinguished gentleman and his partner. I remember that:– He burst in with a decisive step, enveloped in an aura of mysterious confidence. He wore a traditional black tuxedo, perfectly tailored to measure, a fine and sober wristwatch, which gave his attire an air of sophisticated simplicity. Shortly after, here was the lady: in a ruby red evening dress that gracefully adapted to her figure, complemented by elegant heels and gold pendants with exciting pearls.

I remember, says the chef, that the table was set up with obsessive care: white linen tablecloth, with light embroidery, silver cutlery and crystal goblets, candles and flowers.
He, anticipating our service, wanted to open the chair to the Lady, made her sit down and only then did he reach his chair.
To the proposal of the wine he said let’s choose what the lady says. The lady chose a fine Italian rosé sparkling wine, with a superfine perlagè.
The distinguished gentleman raised his glass of wine, carefully observing its wonderful scent and continuous perlagè, before toasting sweetly with his companion.
This simple but meaningful toast marked the beginning of an unforgettable dinner.
For dinner, they chose an appetizer based on Sicilian shellfish, a potagè of zucchini and steamed scallop and as a main course a fish caught head to tail in salt. I remember that we took care of the presentation of the food as if it represented an art representation.

During dinner, their every move was delicate and touching, every gesture measured and graceful. He, with firm but gentle hands, cut the meat with precision, carefully placing it in the center of his plate. She, with fluid movements, savored small bites, enjoying the food as if she were in ecstasy. Their conversations were a flow of careful words, whispered in warm tones that mingled with the background music.
The gestures shown by the couple left us stunned so much there was an innate elegance and sobriety, says the chef.
The naturalness with which they handled the cutlery, without ever making a gesture out of place, was a reflection of their innate elegance. Every detail, from the way they sipped wine to the way they arranged the cutlery on the plates, revealed perfect synchrony.
