Brianza Biodiversity

On Sunday, in Missaglia in the former Convent of Santa Maria della Misericordia, a gastronomic event entirely dedicated to Brianza’s biodiversity, its arts and crafts.

Our Chefs Vincenzo and Salvatore Butticè were present and dedicated a finger food to Brianza using exclusively products from the local supply chain.

A special dedication

Il Moro Ristorante was founded in 1996 and since 2007 IButticè, Antonella, Salvatore and Vincenzo have been taking care of it personally with a young, close-knit and now family team.

The cuisine of Il Moro has always been characterized by a seafood cuisine, a fish cuisine with an elegant, poetic and musical orientation towards Sicily.

Salvatore and Vincenzo have always chosen the fish personally and the chosen suppliers who follow Il Moro enjoy the trust of the family. By choice, Il Moro mainly uses fish or from sustainable and non-intensive farms.

Our chefs have always been convinced that the less you treat the ingredient of the sea, the better, because in the end when you eat fish it must be like taking a dip in the sea and feeling its salt.

Il Moro and Brianza’s biodiversity

After 18 years in Brianza, the feeling of Re-Knowledge towards the host land that has allowed the family to establish itself humanly and professionally has led our chefs to make a specific fucus on this land, rich in its immense biodiversity, rich in its arts and crafts.

To the point that they are dedicating their skills to a real declination towards the Brianza basket, both peasant and courtier.

The Brianza POP Menu is the first gourmet dedication that translates peasant gastronomic content, immediate, simple and natural. Many of the selected ingredients are supplied by small Brianza producers united by a single creed, organic, therefore sustainability and respect for the world-system.

Dedication to Brianza biodiversity

For the occasion, our chefs, Salvatore and Vincenzo, have made a finger based on rastrato corn flour, goat cheese from the Terre Alte consortium and smoked salmon trout produced on Lake Como.
