Olivetti” Institute<\/a> in Monza. This occasion celebrated the richness of the tradition of Brianza cured meats, emphasizing local biodiversity and opening up new perspectives on contemporary cuisine. <\/p>\n

Cured meats represent a pillar of Italian cuisine and a symbol of the local food and wine culture. Brianza, with its heritage of biodiversity and its artisan traditions, offers a unique variety of cured meats ranging from classics such as cotechino to the most innovative versions reinterpreted in a contemporary key. <\/p>\n

During the masterclass, the future chefs of the Olivetti Institute discovered the secrets of craftsmanship, from the maturing times to the selection of raw materials, with a focus on sustainability and the importance of preserving local recipes.<\/p>\n
