Chef Salvatore Butticè at School
Sensitivity towards social issues and towards young IButticè has always been a characteristic of theirs, directly or indirectly, publicly or privately.
The experience that involved the chef of Il Moro Ristorante in Monza, de IButticè, with a clear proposal based on Italian biodiversity with a key that winks at Sicily, their homeland, the regions that have characterized and enriched the career of Salvatore and Vincenzo Butticè, and Lombardy, the region in which they have developed the most important project so far.

The chef was the protagonist of a 4-day cooking class at the State Professional Institute for food and wine services “Olivetti” Monza, at the invitation of the School, the chef of Il Moro Ristorante and Il Moro Eventi, developed 4 ad hoc menus , vegetarian, fish, meat and game and created these menus in a finedining key with a group of 20 students of the Institute.

Q.: Hi Chef Salvatore, how did you, as a Generation X, find yourself interacting with a Generation Z group?
A.: I learned a lot from them, very curious, energetic as a yeast in ferment.
Q.: In public opinion, the idea has spread that Generation Z is less stimulated, more apathetic and less inclined to do, what do you think?
A.: I must say that we have been interacting with Generation Z for years, Antonella and Vincenzo, teaching dining and cooking, maintain a direct and continuous line. The Moro staff already includes 45% of generation Z and we are particularly proud of this. In this experience I have seen the opposite of what is said in bars. I noticed dedication, concentration, desire to know, desire to do, desire to help each other, curiosity and Stakhanovism.
Q.: So your experience is very positive both at the restaurant with your staff and in this experience?
A.: The energy and stimuli I brought with me far exceeded the things I gave them.
